When I did cook, it was always something that was EASY or CONVENIENT. I didn’t go out of my way to prepare healthy foods for my husband and I. I also had the tendency to eat A LOT when I was stressed. If the money wasn’t coming in quick enough, or my baby was sick, or a parent decided to not pay me for the child care that I was providing I’d head for the pantry and whip up a big bowl of buttery popcorn, or chips and dip, or SOMETHING tasty and fattening! Well after doing this for 6 or 7 years, I packed on the pounds and actually weighed as much as I did during full-term pregnancy!!
My body had changed after child birth, my metabolism had slowed, and the obstacle of 35-40% body fat was much bigger than anything I had ever dealt with before.
